This work provides new calculations and simulations on driving Raman transitions with two different lasers on a fast ion beam in collinear / anticollinear geometry. Simulations include ion energy distributions and spatial intensity distributions. First experimental results in the $\mathrm{S}{1 / 2}$-$\mathrm{P}{3 / 2}$-$\mathrm{D}{3 / 2}$ and $\mathrm{S}{1 / 2}$-$\mathrm{P}{3 / 2}$-$\mathrm{D}{5 / 2}$ $\Lambda$-schemes of $^{88}$Sr$^+$ are presented. A newly developed Doppler-free double Raman scheme is used to measure the $\mathrm{D}{3 / 2}\rightarrow\mathrm{D}{5 / 2}$ transition. The measurements performed in this work investigate the systematic uncertainties of this method as well as its experimental limitations and will demonstrate the feasibility and the advances of this approach.
